Who doesn’t love a delicious, simple recipe that only calls for two ingredients! Today we are baking up a sharable serving of baked brie topped with red pepper jelly, beautifully presented in a mini cast iron skillet.
Preheat the oven to 350°F. Spray the oven-safe dish with cooking spray. Place brie wheel on the prepped baking dish.
Score a crisscross pattern about ½ inch deep into the brie. Top the brie cheese with a few spoonfuls of red pepper jelly.
Bake for approximate 15 minutes, until the cheese is melted and gooey.
Carefully transfer the baked brie to a serving dish. Serve immediately with crackers or toasted baguette slices.
Notes
Safety First: If you baked the brie cheese in a cast-iron skillet like I did, allow the skillet to cool for a few minutes or wrap a tea towel around the edges, so guest do not burn themselves while enjoying the dish.
Brie Cheese Rind: The rind is edible and does not need to be cut off prior to baking. The rind not only adds additional texture to the final dish, but it also offers support by holding everything together and preventing the all the cheese from oozing out into a puddle.
