Blueberry Parfaits

Last week I made a simple three ingredient blueberry compote, and this week I’m enjoying the fruits of my labor as a main ingredient in delightful blueberry parfaits. A blueberry parfait is my go-to breakfast of choice during the weekday. The parfaits are quick and easy for breakfast, nutritious and a treat to eat.

I like to enjoy fruit and yogurt parfaits topped with a crunchy granola or trail mix all year around. But I really love to make up blueberry parfaits during Spring, when blueberries are at their peak harvest time. Blueberry season starts late-March and ends in May. During this time, be sure to take advantage of the abundance of blueberries available at the grocery stores and produce markets at a low cost.

Blueberries are such lovely little gifts from nature. They are loaded with vitamins and minerals, and are one of the best natural sources of antioxidants available. Not to mention, their sweet and tart flavor makes for a perfect snack.

Ingredients

  • Yogurt: My yogurt of choice is plain Greek yogurt because it does not include any additional sugar. It is creamy with a hint of tart. If you like your parfaits a bit on the sweeter side, vanilla yogurt would be a great choice.
  • Blueberry Compote: Make your own blueberry compote in less than 15 minutes using my simple blueberry compote recipe. It is easy to make, and can be used up as a topping for other breakfast options like pancakes and waffles. So delightful!
  • Granola: Make up a batch of granola with my easy granola recipe, or use your favorite grocery store granola as a crunchy topping. The main ingredients in granola are oatmeal and nuts, both known as a great breakfast option that helps keep you feeling fuller for longer. A hearty alternative to granola is trail mix.

Instructions

  • Step 1: Gather the ingredients needed along with the glass cups or jars you will be assembling the yogurt parfaits in. In the picture above, I’ve used leftover Oui Yoplait yogurt jars that I washed and saved. I find they are the perfect size for morning parfaits.
  • Step 2: The blueberry parfaits are very easy to assemble, as you are just alternating layers of blueberry compote and yogurt. Start by spooning in a few teaspoons of blueberry compote, followed by a few teaspoons of yogurt. Alternate the layers until you’ve filled up the parfait container. 
  • Step 3: Lastly, sprinkle the top of the parfait with granola.

Honestly, making parfaits can get a little messy. I recommended using two spoons, one for the compote and one for the yogurt, when layering the ingredients into the glasses. This way, the compote and yogurt layers will keep their original color and avoid too much mixing.

Storage

Parfaits store quite well in the refrigerator. If you are making up a batch of parfaits to serve during a brunch you are hosting, or plan to enjoy the parfaits throughout the week, simply make the parfaits (minus the granola topping) and cover the container tops with plastic wrap. The parfaits can stay covered in the refrigerator for up to 4 or 5 days. When ready to serve, you will find the parfaits to be nicely chilled. Add the granola topping and enjoy!

Blueberry Parfait Recipe

Ingredients

  • 1 cup blueberry compote
  • 32 ounces plain Greek yogurt
  • ½ cup granola

Instructions

  • Collect ingredients and clear glasses to assemble the parfaits in. Spoon a layer of blueberry compote, approximately two tablespoons, followed by a layer of yogurt.
  • Keep alternating layers until the glass is full. Top the parfait off with a sprinkle of granola. Enjoy!
