Blackberry Compote & Yogurt Granola Parfaits

I recently shared an easy and wonderful blackberry and lemon compote recipe. Today I'm thrilled to show you how to use blackberry compote as a star ingredient in blackberry parfaits! This yogurt parfait is a real delight that can be made in a matter of minutes, making it a perfect breakfast choice. The tartness of the Greek yogurt is perfectly balanced with fresh blackberries and topped with crunchy granola for some additional flavor and texture.

Parfaits are one of my top go-to meals to enjoy during a morning when I want something nutritious, easy to prepare and simply delightful to consume. Every Saturday, I like to bring in a bit charm into my kitchen by playing relaxing piano music, lighting a honeysuckle scented candle and writing up my activity list or “wish list” list to help ease into the day. The weekend “wish list” is simply a “to-do” list but written in a way to get me excited about the more mundane tasks that need to be checked off. Such as, needing to do laundry, turns into wishing to have clean clothing beautifully organized in the closet. Now doesn’t that feel so much better than a to-do list?

Now, let’s get into how to make this parfait treat! I hope you find this recipe to be a real delight to start your morning off with or to serve during breakfast with family and friends.

Equipment

The only things needed to make a delightful blackberry parfait is the glass you want to serve it in and two spoons to add and layer the ingredients into the glass. The parfait can be served in various glasses, from a small glass jar, a mini trifle cup or a wine glass. Just ensure the container you choose is see through when serving to guests, so everyone can see the beautiful parfait layers.

This blackberry parfait recipe is easily assembled with only four ingredients. For optimal flavor, insure your ingredients are fresh and the best quality you can afford. 

  • Fresh Blackberries: I choose fresh berries over frozen since they offer the most flavor and a firmer texture. 
  • Blackberry Compote: Make your own blackberry and lemon compote in less than 15 minutes with this easy blackberry compote recipe. The compote elevates the parfait, with a beautiful color for presentation and an extra punch of flavor with a mix of sweetness from the blackberries and sugar and tartness from the lemon juice.
  • Yogurt: When making parfaits, I usually use plain Greek yogurt since it does not include additional sugar, has a thick and creamy texture and includes a healthy serving of protein. You can easily replace Greek yogurt with any plain or vanilla yogurt you may have on hand. Such as a yogurt made of coconut milk or the standard yogurt found in most grocery stores. 
  • Granola: Pre-made granola is available for purchase, but I’ve found it to be a bit expensive. Instead, I like to make my own granola with an easy breakfast granola recipe. The ingredients are inexpensive and makes for a great crunchy topping.

  • Step 1: Collect Ingredients & Items Needed: Gather the ingredients needed and the glasses you will be assembling and serving the parfaits in. For today’s presentation, I decided to enjoy the parfaits in stemless wine glasses for an elevated and elegant touch to my morning breakfast.  
  • Step 2: Prep Blackberries: Wash the blackberries and then pat with a paper towel to dry. Slice some blackberries to include within the layers of the parfaits. Leave some blackberries whole to top the parfait off with. 
  • Step 3: Assemble Parfaits: To make the parfaits, you are just going to alternate layers of blackberry compote, sliced blackberries, yogurt and granola. I recommend using two spoons, one spoon for the compote and another spoon for the yogurt, so the compote and yogurt layers will keep their original color and avoid too much mixing. Start by spooning in a few teaspoons of the compote, followed by a layer of sliced blackberries, then yogurt, then granola. Alternate the ingredient layers until you’ve filled up the parfait container. Top the parfait with granola and fresh berries. 

Variations

Fruit parfaits can be enjoyed in so many ways, with various fruit compotes to make and fun toppings, the possibilities are endless! Below are some additional ways I enjoy parfaits as a staple breakfast option or as a sweet treat: 

  • Blueberry Lemon Parfait: Make the most of blueberry season with this parfait
  • Strawberry Shortcake Parfait: Make a strawberry compote, replace the granola with dessert shell short cakes and top with whipped cream. 
  • Tropical Mango Parfait: Make a mango compote and top with toasted coconut flakes.
  • Fruit & Yogurt Parfait: Incorporate a combination of fruits with layers of fresh strawberries and blueberries for an easy and appetizing morning treat.

Storage

Fruit parfaits are a wonderful choice for a meal prep since they store quite well. If you are making up a batch of parfaits to serve during a brunch you will be hosting or just plan to enjoy throughout the week, simply make the parfaits and cover the container tops with plastic wrap or cling film. You may want to omit the granola layer since it will lose its crunchy texture. Instead, just top the parfaits with granola right before you are ready to eat. 

The parfaits can stay covered in the refrigerator for up to 4 or 5 days. When ready to serve and enjoy, you will find the parfaits to be nicely chilled.

Ingredients

  • ¼ cup fresh blackberries
  • ¾ cup sliced blackberries
  • 1 cup blackberry compote
  • 32 ounces plain Greek yogurt
  • 1 cup granola

Instructions

  • Collect ingredients and clear glasses to assemble the parfaits in.
  • Spoon a layer of blueberry compote, approximately two tablespoons, followed by a layer of sliced blackberries, then yogurt, and then granola.
  • Keep alternating layers until the glass is full. Top the parfait off with a sprinkle of granola and whole blackberries. Enjoy!
